PULLED PORK

Instructions:

1. Mix the sugar with the spice mixture. Rinse the meat, pat dry and rub it with the mixture on all sides. Then cover and let marinate overnight in the refrigerator.

2. On the next day preheat the oven to 130°C.

3. Mix the apple juice with the broth and put it in a roasting pan. Place the meat in it and put in on the lowest rack of your oven. Cook for about 6 hours. Add more liquid as needed.

4. When your meat is ready remove it from the oven and wrap it in aluminium foil. Keep warm for 1-2 hours.

5. Meanwhile cut your onions and simmer in the meat sauce until caramelized. Rinse the arugula and spin dry.

6. Unwrap the pork and pick it apart using two forks.

7. Top each bun with arugula, meat and onions and serve!

  • 30 g Sugar
  • 1 tbsp barbecue spice mix
  • 1 ½ kg Pork neck
  • Apple Juice
  • 100 ml meat broth
  • 1 large onion
  • 2 Handfuls of arugula
  • Brioche buns
